2 c sifted flour
1 t salt
2 t baking powder
1 c shortening (Crisco) 2 cups sugar
5 large egg whites shipped 1 t vanilla
1 c whole milk
1 c chopped hickory nuts

Directions:
Directions:
Cream sugar and shortening well
Add vanilla and mix
Alternate adding flour and milk a little (about 1⁄4 of total vol) at a time while continuing to mix
Toss chopped nuts in a little bit of flour
Fold in nuts and whipped egg whites
Divide batter into 2 prepared pans

Bake at 375 for 25-30 minutes or until toothpick comes out clean

Frost with cream cheese frosting or prepare glaze of powdered sugar and milk.

Cream Cheese Frosting
1 large package of cream cheese 1 stick butter softened
2 C powdered sugar
2 t vanilla
Cream butter and cream cheese until smooth Add vanilla and mix
Add powdered sugar and mix until creamy

Celeste is now the official hickory nut cake maker.
I think you can buy hickory nuts shelled now but I remember Dad would have the job of picking out the nuts by hand. A very tedious job as they are very small.
