one baked pie crust
3/4 C. sugar
2 Tbsp. cornstrach
1 cup water
1 3 oz pkg. strawberry gelatin
4 C. fresh strawberries
Whipped cream, of course!

Directions:
Directions:
Before you bake pie crust, poke holes in bottom and along sides to prevent crust from bubbling up. Cool baked pie crust.

In a saucepan, combine sugar, cornstarch and water until smooth. Bring to a boil and cook until thickened, maybe a minute or a bit longer. Remove from heat, and stir in gelatin until dissolved.

Arrange strawberries in the baked crust. You can throw them in whole or you can slice all of them or you can place some whole strawberries on the bottom of the crust with the tips up and add the rest of your strawberries sliced. Finally, pour cooled gelatin mixture over the berries. Refrigerate until set.

So yummy and delicious. We had three of these going at the same time last week. Two for neighbors and one for us. We'd heard about this pie for a long time but this was a first for us. So sorry we did not make it sooner. It's a keeper.
