Grandma’s Chinese Spareribs Recipe

2 lbs Spareribs
3 tbsp Cornstarch
¼ Cup Cold water
¼ Cup Cider vinegar
2 Tbsp Brown sugar
1 Tbsp Soy sauce
1 Cup Pineapple syrup
1 tsp Meat extract
1 ½ tsp Salt
½ Cup Chopped green pepper
1 Cup Pineapple chunks
½ Cup Finely sliced onion

Trim excess fat from ribs. Set fat aside for later.

Wipe ribs with a damp cloth and cut into bars 1" wide.

Place in a large pot and cover with ¼ cold water. Add 1 Tbsp salt.

Cover and simmer 1 hour or until tender. Drain well.

In a skillet, measure 1 Tbsp rib fat. Once very hot, brown ribs slowly and well.

Combine in a bowl: cornstarch, ¼ cup cold water, cider vinegar, brown sugar, soy sauce, pineapple syrup, meat extract, and ½ tsp salt. Add to meat.

Add green peppers and pineapple chunks.

Cook covered about 5 minutes or until vegetables are tender but still crisp, and liquid is thickened

Serve with rice or Chinese fried noodles.
