1 Egg
1/2 Cup Milk
1/4 Cup vegetable oil
1 1/2 Cup All Purpose flour
1/2 Cup Sugar
2 tsp Baking powder
1/2 tsp Salt
1 Cup Huckleberries

Directions:
Directions:
Preheat oven to 400º.

Beat eggs, stir in milk, and oil.

Mix in remaining ingredients just until flour is moistened. Batter should be lumpy.

Fold in the Huckleberries (well drained)

Fill muffin cups ⅔ full

Bake 20-25 minutes.
