3/4 c sugar
1/3 c flour or 3 T cornstarch
1/4 t salt
2 c milk
3 slightly beaten egg ylks
2 T butter
1 t vanilla

Meringue
1/2 c + 2 T water
1 T cornstarch
3 egg whites
6 T sugar
1 t vanilla
pinch of salt

Directions:

FILLING:
Combine sugar, flour and salt
Gradually stir in milk over heat until it boils
Remove from heat
Stir small amount of hot mixture into egg yolks and then add to remaining mixture
Cook 2 minutes longer, stirring constantly
Remove from heat - add butter and vanilla
Cool to room temperature
( to prevent thick top from forming, place plastic wrap or waxed paper directly on top all the way to sides of bowl)
Add to baked pie shell

MERINGUE
Combine water and cornstarch
Cook and stir over medium heat until thickened and clear
Cool completely
Beat egg whites until foamy
Gradually beat in sugar until it stiffins
Beat in vanilla and salt
Spread on filling

Nothing was mentioned about the coconut so I don't know how much
Also I think once the meringue in onto the pie goes into a 350 oven until browned
(watch closely)
