4 lbs. yams
1-1/2 sticks unsalted butter, softened
1/2 tsp. allspice
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. ground ginger
Pinch of cloves
Salt and freshly ground pepper, to taste
1 T. fresh parsley, minced

Generously grease a 8 - 9-cup souffle dish. Make a 2-inch slit in each yam and bake at 400 F. until soft, approximately 1-1/4 hours. Remove from oven and reduce temperature to 350 F. Let yams cool about 20 minutes and then halve lengthwise and scoop pulp into a large mixing bowl. Discard skins.

Add all remaining ingredients, except parsley, and beat well. Turns yams into souffle dish and dot with additional butter. Bake uncovered until top is lightly browned, about 1 hour. Sprinkle with the minced parsley.

Can be made up to 4 days ahead, except for the last step of baking for 1 hour. Just bring to room temperature before baking and then bake at 350 F. for 1 hour. A great holiday dish.
