1 lb. ground hamburger
1 clove garlic, crushed
1 T. butter
1 pkg. frozen chopped spinach
1/2 tsp. oregano
4 eggs, slightly beaten
2 T. grated Parmesan cheese
1 tsp. salt
1/4 tsp. pepper
Extra Parmesan cheese for topping
Directions:
Directions:
In a large skillet, brown hamburger with butter and garlic; add spinach and oregano. Cover and cook until spinach thaws. Add eggs, cheese, salt and pepper. Cook uncovered for 5-8 minutes. Serve.
