Beets, small in size
5 cups sugar
5 cups vinegar
5 T pickling spice, tied in a small muslin (mesh) bag
1¼ cup water (or beet water)

Directions:
Directions:
Boil beets approx. 15 minutes or until tender...depending on size of beets

Slip off skins and put in jars

Boil the sugar, vinegar, pickling spice and water hard for 5 minutes

Pour syrup in jars and seal.
