1 (18.25 oz.) package lemon cake mix
2 eggs
⅓ c. vegetable oil
1 Tbsp. lemon juice
⅓ c. confectioners' sugar

Directions:
Preheat oven to 375ºF. Pour cake mix into a large bowl. Stir in eggs, oil and lemon juice until well blended. Drop teaspoon fulls of dough into a bowl of confectioners' sugar. Roll them around until they are lightly covered. Once sugared, put them on an ungreased cookie sheet. Bake for 6-10 minutes. The bottoms will be light brown, and the inside chewy. (If you prefer crisper cookies, push down the ball a little before baking and bake them till browned. You can also use different extracts or a tsp. of vanilla for a different version.
