1/2 c. spelt flour
5 T. white sugar
1/4 tsp. baking soda
1/8 tsp. salt
1/2 tsp. xanthan gum
1 tsp. lemon juice
1/2 tsp. raspberry extract
5. tsp. oil
2 T. water

Directions:
Directions:
Mix all dry ingredients together thoroughly. Add all wet ingredients except the water and rub between your hands until there are no big lumps. Add water and stir only until mixed; do not over-stir.

Spoon batter onto greased cookie sheet leaving room for the cookies to spread as they cook.

Bake at 350º for 8 minutes.

Let the cookies cool for 10 minutes before trying to get them off the cookie sheet, then move them to a cookie rack while they are still warm.
