NOTE: Highly recommend you have a kitchen scale and use it to measure ingredients as it is more accurate than using measuring cups, for flour, water and sometimes yeast, salt and sugar.

1 1/8 C lukewarm water, (141.5 g).
1 C Ripe Sourdough Starter (241 g).
2.5 C (301 g) King Arthur Unbleached All-Purpose Flour
1 1/4 tsp salt
1 tsp sugar
1 - 2 tsp instant yeast, depending on the vigor of your starter
2 tsp vital wheat gluten flour (Red Mills or King Arthur).

TO MAKE YOUR OWN SOURDOUGH STARTER: copy and paste link below into your browser for full instructions. Plan ahead as it will take 7 - 14 days to grow your starter and achieve a "ripe" condition needed for making the dough. Once achieved, the starter can be put in the frig with a cover and feedings will be once per week to keep starter healthy. Remember to disgard a portion of the starter as instructed, or you'll have a huge blob growing in your frig!
