2 c sugar
1 cup vegetable oil
2 cups grated zucchini (washed and skin left on)
2 tsp vanilla
3 cups flour
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
2 tsp ground cinnamon

Preheat oven to 325º

In a small mixing bowl stir together flour, salt, baking soda, baking powder and cinnamon. In a large mixing bowl beat eggs, sugar and oil together, stir in zucchini and vanilla, add dry ingredients stir coImbined, mixture will be lumpy. Don't over mix. At this point you may fold in 1 cups raisins and/or 1 cup chopped walnuts, if desired. Alternatively, you may add 1 cup mini chocolate chips at this point. (Regular sized chocolate chips tend to sink and stay on the bottom of the loaf, if you want to use them, first toss them with 2 tbsp flour to coat, then fold into batter.)

Divide batter between two loaf pans. Bake for one hour, or until a toothpick inserted in the center comes out clean.

This is my mother-in-law's recipe and she made it often, as my father-in-law, Don Hemberry, planted a large garden every year and there were always lot of giant zucchini that were great for baking. This is a favorite of my oldest son, Greg.
