1 C. Sugar
1 C. Brown Sugar
3/4 C. Oil
3 Eggs
2 C. grated Carrots
1 tsp. Vanilla
3/4 C. Buttermilk
2 C. Flour
2 tsp. Baking Soda
2 tsp. Cinnamon
1/2 tsp. Salt
1 C. Nuts

Directions:
Directions:
Mix sugar, oil, eggs, vanilla and buttermilk. Combine flour, baking soda, cinnamon & salt. Mix well. Add carrots and nuts. Mix. Pour into 2 greased round pans. Bake at 350º for 40 minutes or until done.

Icing:
1/2 C. butter
8 oz. cream cheese
1 tsp. Vanilla
1 lb. Powdered Sugar

Combine all and mix into a bowl with a mixer until creamy. Cover cake with icing.
