1 C. Pure Maple Syrup
2 T. finely grated fresh Ginger
4 T. fresh Lemon Juice
3 T. Soy Sauce
1 1/2 tsp. minced Garlic
an untreated cedar plank
2 1/2 lbs. Center-cut Salmon Filet
greens from 1 bunch Scallions

In a small heavy saucepan, simmer maple syrup, ginger, the lemon juice, soy sauce, garlic, and salt and pepper to taste until reduced to about 1 cup (approx. 15-20 min.) and let cool. (Glaze can be made 2 days ahead and chilled covered, but bring to room temperature before using.)

Soak Cedar Plank for 30 minutes in tap water. Arrange scallions in one layer on plank. Put Salmon, skin side down on the bed of scallions. Brush with the glaze (you can use half of it as a glaze and the other half as a sauce...keep the sauce warm). Barbecue over medium heat for about 35 minutes, or until the meat flakes on the ends. Serve with mashed potatoes or rice. You can also bake at 350º for 25 min.
