1 c sugar
1/4 c cornstarch
1 1/2 cups cold water
3 egg yolks slightly beaten
1/4 c lemon juice
Grated peel of 1 lemon
1 T butter
1 baked pie crust
3 egg whites
5 T sugar


Directions:
Directions:
In double boiler combine 1 cup sugar and corn starch. Gradually stir in water until smooth. Stir in egg yolks. Stirring constantly until thick. Remove from heat and stir in next 3 ingredients. Spoon hot filling into crust. I small mixer bowl beat egg whites at high speed until soft peaks form. Spread meringue evenly over hot filling sealing to thecrust. Bake in 350º oven 15-20 minutes or until golden.
