Basic custard
3/4 C sugar
1/2 C all-purpose flour
1/4 tsp salt
2 C milk
3 slightly beaten egg yolks
2 T butter
1 tsp vanilla

Meringue
3 egg whites
5 T sugar
1 tsp vanilla

1 Deep dish pie crust baked until golden brown.

See below for additional ingredients for chocolate, banana, butterscotch, and coconut pies

Custard
Combine sugar, flour & salt in a double boiler, add milk and stir. Cook until thick. Add a small amount of hot mixture to beaten eggs and stir, Add egg mixture to sugar mixture. Cook until thick. Add butter and vanilla. Pour into baked pie shell. Beat egg whites until it makes peaks then add sugar and vanilla. Cover pie with meringue making sure to seal edges. Bake at 350º Until peaks become light brown.


Variations of Pies

Chocolate
Increase sugar to 1 cup
3 T cocca or 2 oz unsweetened chocolate add with butter & vanilla stir until melted

Banana
3 bananas cut into bottom of prepared pie shell

Coconut
1 cup coconut stir in 3/4 cup after butter & vanilla. Sprinkle remaining on top

Butterscotch
Use brown sugar in place of regular
