1 package dry mixed beans
1-8 oz can tomato sauce
2 quarts canned chicken or vegetable broth
1 cup chopped onion
1 Tbls chopped parsley
1 clove garlic, chopped
1 cup celery, chopped
1 cup carrots, sliced
2 to 3 red potatoes, diced
Italian seasoning and salt & pepper to taste

Directions:
Wash beans, then soak over night in water. Rinse beans, then add all ingredients together in a large stock pot. Cook covered for 90 minutes, stirring occasionally. To serve, top with grated Parmesan cheese.
