Cook and rice the potatoes.

For 4 cups of riced potatoes use about 4 cups flour and add 2 beaten eggs. Roll into balls and cook 20 minutes in salt water.

You can use as many potatoes as you want just use amount the same of flour and eggs accordingly. Make sure the riced potatoes are cold. I put them in refrigerator then mix dumpling not to lone before you want to cook them.
