1/2 cup margarine
1/2 cup powdered sugar
1/2 tsp vanilla
2 cups flour (or 1/2 cup soy flour or 1/2 cup white flour)
1/2 cup oil
1/2 cup sugar
1 egg
1/2 tsp baking soda
1/2 tsp cream of tartar
1/2 tsp salt
sugar to coat cookies

Preheat oven to 350º
thoroughly cream first 6 ingredients. Add remaining dry ingredients + mix well.
Chill dough in refrigerator for at least 1 hour.
With hands shape dough into small balls + placeon ungreased cookie sheet. Flatten with a glass dipped in sugar + bake in 350º 10-12 minutes or until golden brown around edges
Makes about 5 dozen medium sized cookies

Use a glass with a design on the bottom for a pretty party cookie
