Ingredients: 8 oz. flour 1 tsp baking powder 1 pinch salt 8 Tbsp sugar 1 egg 2 oz peanut oil 1 fresh lemon, whole 1 tsp orange juice 2 lbs green apples (4 large) 3 Tbsp unflavored bread crumbs

Directions:1. Sift flour, baking powder and salt into mixing bowl. Mix. 2. Add 4-5 Tbsp sugar. Reserve small amount of this mixture 3. Crack whole egg into mixture; Add oil. 4. Squeeze 1/2 lemon into glass; pour through strainer to remove pulp and pits and add to mixture 5. Add 1 tsp orange juice – mix well 6. Add reserved flour mixture slowly 7. Knead dough and sprinkle with flour 8. Wash apples – divide dough into 2 almost halves 9. Roll out dough. Sprinkle with flour to prevent sticking. 10. Bring dough up to top of sides of 9” pie pan. 11. Peel apples into mixing bowl and cut into small slices in bowl 12. Warm oven to 350°F 13. Add about 3 Tbsp sugar to apples 14. Prepare other half of lemon as before and pour over apples. 15. Place apples in pie pan. Distribute evenly. 16. Sprinkle plain unflavored bread crumbs over apples to keep in juices. 17. Roll out dough for top. Place over apples and push edges together with knife. 18. Stab top of crust with knife for air holes 19. Place pan in middle rack of oven 20. Bake 3/4 hour to 1 hour. |

Notes: This recipe is from Rebecca (Becky) Weissman. Aunt Becky, as our other relatives called her, was the mother of Bettie (Weissman) Fishman, who was the mother of Gary and Alan Fishman. Grandma Becky (Pfeffer) Weissman was born on September 25, 1892, she married Grandpa Joseph Weissman in 1915, and she passed away on December 17, 1970. This was and continues to be that part of the Fishman family's favorite apple pie recipe and it remains so through its 5th generation.
