2 egg whites, carefully separated so that NOT ONE DROP of yolk is evident
½ cup sugar
½ tsp pure vanilla extract
¼ tsp pure almond extract

Directions:
1)Using an electric mixer, beat the egg whites in a glass or ceramic bowl until they just begin to get stiff and fluffy
**Egg whites should never be beaten in plastic, as they will never form peaks**
2) While the mixer is still going, beat in 6 tbsp sugar, a little at a time. Continue beating until the mixture starts holding shape
3) Still beating on high speed, add rest of sugar and all of the vanilla. Mixture should be glossy and form a peak when beaters are turned off and removed.
4) Line 2 cookie sheets with parchment paper. Drop mixture by generously rounded teaspoons onto parchment paper with a slight peak in the center (resembling a Hershey kiss)
**Use 2 teaspoons to accomplish the drop, one to scoop, the other to remove meringue from scoop spoon**
5) Bake at 250 degrees for 50 minutes
6) Allow to cool. Remove gently from parchment paper.
**These will crumble if handled too roughly**
