1 Cup Unsalted butter, softened
1 Cup Peanut butter
1 Cup Sugar
1 Cup Brown sugar (light or dark)
2 Large Eggs
2 Tsp Vanilla
2½ Cups Instant Oats
2 Cups Flour
1 Tsp Baking soda
1 Tsp Baking powder
½ Tsp Salt

Directions:
Directions:
1. Preheat the oven to 350º.

2. In mixing bowl, beat together the butter, peanut butter, sugars until light and fluffy, about 5 minutes (this given the oats time to absorb some of the moisture giving you the nice cookie dough texture).

3. Add the eggs and vanilla and mix to combine.

4. Add the oats, flour, baking soda, baking powder, and salt to the bowl and mix to combine well.

5. Let the mixture rest for 5 minutes and stir again.

6. Place cookie dough onto baking sheet and bake for 10-12 minutes, until the edges are lightly browned.

7. Remove from the oven and let cool on the baking sheet for 5 minutes before removing to a wire rack to cool.
