• 3 pounds of 85% ground Hamburger
• 1 tablespoon black pepper
• 1 tablespoon garlic powder
• 1 small onion, grated
• 2 cups of grated Italian cheese
• 5 eggs
• ½ cup dried or fresh parsley ( if using fresh parsley, remove the stems and chop the leaves into small pieces)
• 2 cups bread crumbs (moisten in water until a soft mixture is obtained. Squeeze out excess water)

Mix the ingredients in a roasting pan (this will allow enough room for easier mixing)

Mix like one kneads dough and until the red of the meat is no longer visible.

When this is done, take a handful of the mixture and in the palm of the hand roll it into balls for a couple of seconds. ]Set aside.

Put ¼ cup of oil in a large frying skillet. Let the oil warm up over medium heat. Fry the meatballs until they are dark brown on each side.

Save the grease mixture to start the Italian sauce.

HINT: Using the cheese, bread crumbs and the mixing is the secret to soft, tender meatballs. This same mixture can be used for meatloaf and stuffed peppers

Virginia Paratore has been famous for her Meatball recipe since 1954, she was taught how to make meatballs from her mother in the mid 1940’s and has passed down this recipe to the next generation of Italian cooks.

Dominic and I did concession stand for football games when our sons Dominic and Christopher played football. Grandma Paratore would make 2 pans of meatballs for 50 sub sandwiches for the games and they would be sold out before the game even started.
