⅓C Meringue Powder
½C Water (Warm)
¼-1 tsp Butter Flavoring (Optional)
1tsp Vanilla
2 Tbsp Fresh Lemon Juice (optional)
2 lbs (7½-8 C) Powdered Sugar
1Tbsp Light Corn Syrup

Directions:
Directions:
Place meringue powder and water in the bowl of a standing mixer. Grab the whisk attachment and swirl them around together for a few seconds by hand.
Let sit for 5-10 minutes.
Attach the whisk to the stand mixer and mix on high for 2-3 minutes. It should be frothy. Scrape the sides with a rubber scraper.
Add vanilla, butter flavoring, and fresh lemon Juice. Mix until incorporated.
Add ½ powdered sugar and mix until incorporated. Don't turn it to high all at once or you're just going to get powdered sugar everywhere.
Add Light Corn syrup and mix until incorporated. Add remaining powdered Sugar and mix until incorporated.
Continue to mix for 2-3 minutes on high.
Transfer to an airtight container. Use immediately or store covered in the fridge for up to 2 weeks.
