3 cups cooked Squash, drained
3 oz. Cream Cheese, softened
1 small Onion, chopped fine
1 pkg. Lipton Cup-of-Soup Cream of Chicken (this isn't sold in many stores any more but it is worth it to hunt for it)
1/2 stick Butter, melted
1 sleeve of Saltine Crackers, crushed
Salt & pepper to taste

Mix finely chopped onion and cream cheese. Make soup by package directions and add to onion & cream cheese. Add squash. In a separate bowl, pour butter over crushed crackers and stir until coated. Sprinkle bottom of the casserole dish with half of the crackers. Pour squash mixture in casserole dish and top with remaining crackers. Bake at 350º for 30 minutes.

The Lipton Cup-of-Soup is found in the soup aisle of the grocery stores that actually still sell it. It is a powder that is mixed with boiling water. If you can't find the Cream of Chicken flavor you can use the Onion Soup flavor (found in most stores) and it will still be good...just not as good as the original.
