2 cups shortening
2 cups white sugar
2 cups brown sugar
4 eggs
1 tbsp vanilla
2 cups peanut butter (creamy is better)
4 cups flour
4 tsp baking soda
1 tsp salt
Large bag of Hershey kisses, unwrapped

Directions:
Directions:
1. Preheat oven to 350º.

2. Cream together shortening, sugar, brown sugar, eggs and vanilla in stand-up mixer.

3. Add peanut butter and mix in on low speed.

4. In separate bowl, sift together flour, baking soda and salt. Slowly add to mixer bowl on low speed, increasing to higher speed as dough gets thicker.

5. Spoon onto ungreased baking sheets. Bake at 350º for 9 minutes. Add Hershey kiss to the middle of each cookie and bake for 1 more minute.

6. Allow to cool on sheets for a minute or two and then transfer to baking racks to fully cool.

We make these every year for Christmas! I think it makes about 80 cookies, so plenty to add to cookie trays to share. I tried to use butter instead of shortening, but it didn't taste as good.
