1 cup Vegetable Oil
3 Eggs, slightly beaten
2 cups Sugar
2 cups Zucchini, grated
2 tsp. Vanilla
3 cups All-purpose Flour
1 tsp. Salt
1 tsp. Baking Soda
1/4 tsp. Baking Powder
3 tsp. Cinnamon

Directions:

Combine oil, eggs, sugar, zucchini, and vanilla in mixing bowl. Blend well. In separate bowl stir together flour, salt, baking soda, baking powder, and cinnamon. Add slowly to zucchini mixture until blended. Spoon into well-greased loaf pans. Recipe will fill two 9x5 loaf pans or six 5x3 mini-loaf pans. For 9x5 loaf pans bake at 325º for 1½ hours. For 5x3 mini-loaf pans bake at 350º for 38-42 minutes.

Here is a tip that you probably could figure out on you own but I'm your mother and I have to tell you these things. If you are making mini loaves it is much easier to put the mini pans all on a large baking sheet and put them in the oven at the same time. Also, zucchini bread freezes well if you wrap in about 3 layers of saran wrap and a layer of aluminum foil. This recipe makes a crap-ton of bread and you might not want to eat that much all at once or maybe you do and that's cool too!
