5 tablespoons of natural no-sugar added peanut butter
1 tbsp. of melted coconut oil
1 large egg
1 tsp. of pure vanilla extract
1 cup of Kirkland's blanched almond flour
1 tbsp. of confectioners swerve (sweetener)
¼ cup of chocolate chips
½ tsp. of baking soda
¼ tsp. of baking powder
Pinch of salt

1. Preheat oven to 325º Fahrenheit.

2. Add all the liquid ingredients into a large bowl and mix. Then combine the dry ingredients in the same bowl.

3. Line a baking sheet with parchment paper and coat it with baking spray.

4. Make 12 (twelve) equal side scoops of the mixture to the baking sheet.

5. Bake the cookies for about 8-10 minutes. Check to see if they are golden brown around the edges.

6. Finally, let the cookies cool on the baking sheet.

This is one of the most recent desserts that mom has made! We all enjoyed it, especially dad when he ate two of the cookies and there were only four in total! I am sure you can remember those times! It was made with a lot of love as well!
