Gramma Lila's Cinnamon Rolls Recipe

Ingredients: Heat 2 cups of milk in a pot to barely scalding--just below boiling. Add 1 cup of sugar and 2 sticks of butter. Set aside to cool to a warm temperature.
Beat together in a bowl:1 cup warm water, 2 packages yeast, 1½ cup flour. Let rise a little, while milk mixture is cooling.
Peel at least 1 doz. cardamom pods, grind seeds, and then add to milk mixture (or 2 to 3 tsp. ground cardamom).
Beat 3 (room temp.) eggs, then add to warm milk mixture.
Combine milk mixture with yeast dough.
Add 1 tsp. salt and 6 to 7 cups flour, one cup at a time. Place dough on floured board and knead until dough is heaving and firm with a satiny surface with little bubbles. Add more flour to keep dough from sticking, but not too much (less flour makes more tender rolls). Put dough in a bowl and let rise in a warm place. Once it rises, punch down and form into rolls.
Using a rolling pin on floured board, roll out about a sixth of dough at a time. Brush flat dough with melted butter and cover with cinnamon and brown sugar. Roll dough into a log and then cut log into 1" to 1½" pieces. Arrange in buttered and floured round pans. This recipe will make about 6 round cake pans of rolls. Let rolls rise in a warm place. Bake at 350º for 10 to 15 minutes.

Directions:Our wonderful Grandma Lila lived in Minnesota, and we lived in California, so we only got to see her a few times a year. When she came to visit us, she played with us and cooked delicious meals for us. Some of our happiest childhood memories are of spending a day making these delicious cinnamon rolls together. We have continued that tradition with our own families! (Grampa Sam's sister Lila and her family lived in Floodwood. I, too, remember her as a lovely lady. When us kids were young we would go and visit her during the summer with Mom and Gramma Hilda. I specifically remember her kitchen. She was a rather short lady, and her husband, John, built her special cupboards "just right" for her stature. I also remember going to the Floodwood Fair. It was close by their house, and we could just walk over. What fun that was!) |
