½ cup vegetable oil
½ cup sugar
½ cup molasses
1½ tsp apple cider vinegar
1 egg
3 cups flour
¼ tsp baking soda
½ tsp ground cinnamon
½ tsp ground ginger
¼ tsp Salt
cinnamon candies and colored sugars for decorating

Directions:
Directions:
Preheat oven to 350ºF.

1. In a small saucepan, mix together oil, sugar, molasses and vinegar. Bring to a boil. Pour into a large bowl an set aside to cool, about 30 minutes.

2. Into a medium sized bowl sift together dry ingredients.

3. Beat the egg into the thoroughly cooled molasses mixture. Gradually add flour mix to molasses-egg mix. It will form a soft dough. Chill 2 hours or overnight.

4. Roll out onto a floured board to ¼-⅛ inch thickness. Cut with cookie cutters and decorate with cinnamon candies, colored sugars and icing. Bake on parchment paper lined cookie pans approximately 10-12 minutes.
