Custard:
Juice of one lemon
One lemon rind
3 tbsp of water
3 egg yolks
1/2 cup of sugar

Baked pie crust

Meringue:
3 egg whites
1/2 cup sugar

Directions:
Directions:
Cook juice and rind of one lemon and 3 tbsp of water with the yolks of 3 eggs.
Add 1/2 cup of sugar.
Cook in a double boiler until thick. Put aside until cool.
Beat whites of 3 eggs until stiff and gradually add 1/2 cup of sugar.
Pour custard into baked crust, then the meringue on top.
Set in oven 10 or 15 minutes, or until peaks form (doesn’t say what temperature)
