4 elongated eggplants (use young eggplants, they have less seeds)
salt
buttermilk
canola oil
self-rising flour

Directions:
Directions:
1) Peel and slice eggplant lengthwise; slice thinly
2) Salt slices. Place on colander and let drain 30 minutes or more.
3) Place eggplant in buttermilk.
4) Heat oil in cast iron skillet.
5) Take eggplant out of milk and drench in self-rising flour.
6) Place in hot oil and fry until golden brown.
7) Drain. Serve warm.
