1 1/2 cups (188 grams) all-purpose flour
1/2 cup (65 grams) whole wheat flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 cup salted butter (room temperature)
1 1/2 cups dark brown sugar
1/2 cup granulated sugar
2 large eggs
2 cups old fashioned oats
1 TBSP vanilla extract
6 oz dark chocolate (chopped)

Directions:

1. Whisk flours, baking powder, baking soda and salt in a medium bowl.
2. Beat butter and sugars with a stand mixer until light and fluffy (about 5 min). Add eggs one at a time. Reduce mixer speed and gradually add dry ingredients.
3. Switch to a spoon and stir in oats then fold in chocolate.
4. Chill dough for 2 hours. Then preheat oven to 375°.
5. Use a size 60 scoop to portion out dough onto a parchment lined baking sheet. Bake for 8-9 minutes. Let cool on baking sheet for several minutes before moving to a wire rack to cool completely.

*It is very important to use good chocolate. My choice is Green and Blacks 70% cocoa.
