3 lbs boneless skinless chicken (thighs, breasts or a mix)
2 Tbsp cornstarch
2 Tbsp extra virgin olive oil
2 large cloves garlic, crushed
1/4 tsp ground ginger (or more to taste)
1/4 tsp kosher salt
1/4 tsp cayenne pepper (or more to taste)
2-5 Tbsp applesauce, sweetened or not (one single serve 'cup' works well)
1/4 c bourbon or whisky
1/4 c light brown sugar
2 Tbsp ketchup
1 Tbsp cider vinegar
1/2 cup water
1/3 cup soy sauce

Cooked rice (for serving)

Directions:
Directions:
Whisk all ingredients in dutch oven or crockpot. Add chicken and coat with mixture.
Dutch Oven: Heat over Medium heat just to simmer. Place in oven at 325º for 1.5 to 2 hours. (Should be tender and easyish to break apart)
Crockpot: Cook on low for 8 hours or high for 4 hours.
Serve over rice.

I cooked at 325 for about 1.5 hours, then 300 for 45 minutes. Came out great.
