3 pints cooked red beets
1 cup of apple cider vinegar
½ tsp of salt per pint
½ cup of sugar
1 Tbsp. of whole cloves
2 cups of water

Directions:

Mix all ingredients and bring to a boil. Pour over beets. Cold pack and let cure for at least one month.
