2 butternut squash - peeled and cut into 1" cubes
2 large red onions - peeled, chopped (about 4 cups
3 T Wegmans Basting oil, or evoo with seasonings
salt and pepper to taste
1 pkg baby spinach
3/4 c dried cranberries (I prefer unsweetened but can never find them, so I used sweetened, preferably with juice or cane sugar)

Directions:
Directions:
Combine squash and onions in large shallow pan; drizzle with basting oil. Season to taste with salt and pepper and toss lightly.

Roast 55 minutes at 350 until tender and brown. Add spinach and cranberries, and toss.
