8 ounce (224g) package cream cheese, at room temperature
1 cup butter, at room temperature
1½ granulated sugar
1½ tsp vanilla
2¼ cups all purpose flour (¼ cup for fruit)
1½ tsp baking powder
16 ounces candied fruit
½ cup chopped pecans
1 cup Golden raisins
4 eggs

1. Preheat oven to 275 º
2. Grease and flour a large Tube pan.
3. In 2 quart bowl, whisk together 2 cups flour and baking powder.
4. In second 2 quart bowl, combine candied fruit and raisins; sprinkle remaining ¼ cup flour and stir until fruit is coated with flour.
5. , Using a hand held mixer or stand mixer fitted with a paddle attachment, cream butter until fluffy; add cream cheese and mix until fully incorporated.
6. Add sugar to butter/cream cheese mixture and beat for 4-5 minutes until light and fluffy.
7. Add eggs, one at a time, beating well after each addition; then, add vanilla and mix for 1 minute.
7. Stir in four/baking powder mixture until flour fully incorporated. Fold in dried fruit and pecans.
8. Spoon batter into prepared Tube pan. Bake on middle oven rack for 1½ hours or until a toothpick inserted in centre comes out clean.
9. Turn oven off and leave in oven an additional 10 minutes.
10. Set cake pan on rack for 20 minutes. Turn cake onto rack and leave on rack until thoroughly cooled.

There are fewer and fewer people who like Christmas Fruit Cakes; however, it is hard to let go of the old tradition of baking one! I like the dense mixture of candied fruit, nuts, raisins, and currants, topped with a rum or brandy glaze. There are many recipes to choose from.
Baking a "Light and/or Dark" Fruitcake were not part of Grandma Mulley's holiday baking preparations. However, she did make this somewhat modified version of a "Light Fruitcake". The addition of cream cheese elevates the moist texture and balances the sweetness from the candied fruit. A small slice of this cake, can convert even the hardcore Fruitcake "naysayers" and earn a Thumbs-up!
