Honey or Jerusalem artichoke / agave syrup / maple - 90 g

Ginger (dry) -1 tsp.

Cinnamon - 1 tsp

Baking soda- 1/2 tsp

Olive oil - 5 g

Egg - 1 pc.

Flour / wheat flour, 250 g. + - 20 g.

Sweetener, optional.

Directions:

1. In a saucepan, mix the honey \ syrup, ginger, cinnamon and optional sweetener. Put on the fire and bring to a boil. As soon as it boils, remove from the heat and add soda - the mixture will start to foam and sizzle - it should be so. Add olive oil and mix.

2. Whisk the egg a little and add to the honey mixture. Mix everything again.

3. Then gradually pour the flour, kneading the dough. It will turn out very soft, gentle, should not stick strongly to hands. But do not do it too much.

4. Roll out the dough on a floured surface and cut out the figures.

5. Put the cookies on the baking sheet and bake at 180 ° C for 5-6 minutes.
