2 teaspoons cream of tartar
1 teaspoon baking soda
1 cup of butter or margarine (2 sticks), softened
1 1/3 cups plus 1/4 cup of sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 teaspoons ground cinnamon

Despite their funny name, these cimmamon sugar-coated butter cookies became a favorite all across the country and are now considered an American classic. They are so much fun to make, the kids will beg to help.

1. Preheat oven to 375° F. In large bowl, stir together flour, cream of tartar, and baking soda.

2. In separate large bowl, with mixer at medium speed, beat butter and 1 1/3 cups sugar until light and fluffy. Beat in eggs and vanilla. Reduce speed to low; beat in flour mixture until well blended.

3. In small bowl, combine cinnamon and remaining 1/4 cup sugar. With hands, shape dough into 1-inch balls. Roll in cinnamon-sugar to coat. Place balls, 1 inch apart, on ungreased large cookie sheet. Bake until set and lightly goden and slightly cinkly on top, 12 minutes. Cool on cookie sheet on wire rack 1 minute. WIth wide metal spatula, transfer cookies to wire racks to cool competely.

4. Repeat with remaining dough
