No-Bake Mint Chip Cookies Recipe

2 c unsweetened shredded coconut
½ c coconut cream (top part of canned coconut milk)
2 tbsp maple syrup (or other sweetener)
1 or 2 tsp mint extract
½ tsp spirulina
¼ c cacao nibs
2 c chocolate chips or hard dark chocolate - put in double boiler with coconut oil, butter, and maple syrup or other sweetener)

Directions:
Directions:
1. In food processor, blend coconut until finely ground.
2. Add coconut cream, sweetener, mint extract and spirulina. Process to form sticky dough.
3. Add cacao nibs, and blend in.
4. Scoop out tablespoon of dough and shape into cookie. Chill for 15 minutes in freezer.
5. Dip in melted chocolate.
6. Refrigerate or freeze until firm. Fridge - soft like peppermint patty; freezer - firm like a cookie (my fav).
