12 oz pasta
4 slices bacon
1 c chopped onion
2 cloves garlic, minced
1 can white beans (15 oz), drained and rinsed
3 c fresh baby spinach or 1 10 oz package frozen spinach, thawed and drained well.
1 1/2 t orange zest

Directions:
Directions:
Cook pasta and drain. In large skillet, cook bacon until crisp and crumble. Discard all but 2 T drippings and saute onion and garlic 5 minutes.

In large bowl, combine pasta, bacon, onion mix, beans, spinach and orange zest. Serve immediately.

I usually put this on plates, then sprinkle some cheese on top and melt it in the microwave before serving. This is great, healthy comfort food!
