1 cup margarine
3/4 cup granulated sugar
1 egg
3 cups all purpose flour
1 tsp baking powder
1 tsp vanilla

Seedless raspberry jam
icing sugar
almond extract

Candied cherries cut in small pieces

Directions:
Directions:
Cream margarine, add sugar and egg and beat until light and fluffy, add vanilla.

Gradually sift in dry ingredients.

Roll out thin on a floured surface - cut with a round cookie cutter.

Bake in 350ºF oven for approximately 10 minutes. Cool on rack.

Icing:
1 cup sifted icing sugar
1/4 tsp almond extract (or less depending on taste)
1 tbs hot water

Cover bottom portion (looks nicer) of cookie with a bit of raspberry jam, cover with another cookie.

Spread the icing over the top of the cookie sandwich and garnish with a piece of candied cherry.

This is a foolproof recipe as long as you're careful not to overbake the cookies. These are delicious year-round - not just at Christmas.
