1 1/2 c. water
2 1/4 tsp. active dry yeast or one packet
3 c. sifted flour
1/4 tsp. salt
3 large eggs, separated plus 1 egg white
1/3 c. sugar
8 T. salted butter, melted and cooled
2 tsp. vegetable oil
2 tsp. vanilla extract
1 1/2 c. whole milk

Directions:
Heat 1/2 of the water to lukewarm, 105-110 degrees. Dissolve the yeast in the water with a pich of sugar and let it stand 5-10 minutes, until the mixture begins to foam. Put the flour and salt into a large bowl and stir to blend and set aside. Add the egg yolks, one of the egg whites and sugar to the yeast mixture and stir to blend. Add the remaining water, milk, melted butter, oil and vanilla. Stir until the mixture is smooth. Beat the egg whites until stiff peaks form. Fold the egg whites gently into the batter. Let the batter stand for one hour, stirring every 15 minutes. I consider this step optional. Preheat your waffle maker. When ready, pour the appropriate amount of batter into your waffle maker. Waffles may be kept warm in a slow 200 degree oven. Serve them with butter, pure maple syrup, fresh sliced fruit, fruit compote, and/or whipped cream. . .yum!

I usually make these every weekend and Spencer and Garrett chow them down and eat them throughout the week. Pure maple syrup, unsalted butter and fresh sliced strwberries make this a special treat. I use a Belgian Waffle Maker, but I am sure that you could use this recipe with a traditional waffle maker as well.
