2 c. sifted all-purpose flour
2 T. sugar
1 T. baking powder
1/2 tsp. baking soda
1 tsp. salt
2 well beaten egg yolks
2 c. buttermilk (whole fat if you can find it)
2 stiffly beaten egg whites
1/2 tsp. vanilla

Directions:

Sift together dry ingredients. Combine egg yolks and milk. Pour into dry ingredients; stir well. Fold in egg whites. Bake on hot griddle using 1/4-1/3 c. batter for each pancake. Dot with unsalted butter and serve with real maple syrup.

When I am not making Belgian waffles on the weekend, I make these pancakes. They are simple to make and are far tastier (David's opinion) than any mix that you can buy.
