1 cup flour
1/2 tsp baking soda
3/4 tsp kosher salt
4 TB unsalted butter
1/2 tsp cinnamon
3/4 cup dark brown sugar, firmly packed
1/2 cup sugar
1/2 cup vegetable oil
1 large egg
1 large egg yolk
1 tsp vanilla
2 cups old fashioned rolled oats
1/2 cup semi sweet chocolate chips
3/4 cup coconut
1/2 cup chopped pecans or walnuts

Prehat oven to 375º

Line cookie sheets with parchment paper

Whisk together flour, salt & baking soda'

Melt butter in a skillet over medium heat , swirling to melt. Stir often until butter is golden brown & nutty aroma (about 2 minutes). Transfer to a large bowl, be sure to transferbits from the pan

Stir cinnamon into butter.

Add sugars & oil & whisk until combined well.

Stir in flour mixture & combine well - about a minute.

Add oats, chips, coconut, & nuts. Stir until well incorporated into a stiff dough.

Drop onto cookie sheet ( about 3 TB scoops)about 2" apart & flatten with a glass

Bake until edges are set but centers are soft - 8 to 10 minutes. Leave on sheets to cool for first 5 minutes then transfer to a rack
