1 lb. ground beef
1 small onion, minced
1 green pepper
1 1/2 C canned tomatoes (including juice and pulp)
1/2 C Burgundy or other red wine
1 tsp oregano
Salt and pepper
2 C cooked rice
2 TBL bread crumbs
2 TBL grated Parmesan cheese
Paprika

(Note; Julie uses a combo of red and green bell peppers and adds a Chicken Better Than Boullion cube to the tomatoes)

Directions:
Directions:
Sauté beef, onions and bell pepper until meat is no longer red, breaking into bits while cooking
Add tomatoes and wine (and boullion cube if using)
Cook for a few minutes until juice of tomatoes is slightly reduced.
Add oregano, salt and pepper to taste.
Combine beef mixture with rice.
Place in lightly greased casserole.
Sprinkle with bread crumbs and cheese, then dust with paprika.
Bake at 350º for one hour

Note; Julie serves with sour cream.
