Cake:
2-1/2 c all purpose flour
1/2 tsp salt
3 tsp baking powder
1-2/3 c sugar
1 c shortening
scant cup milk
1-1/2 tsp vanilla extract

Icing:
1 16 oz. light brown sugar
1/4 tsp salt
1 stick butter
1 can evaporated milk
2 tsp vanilla extract

Cake:
Sift dry ingredients. Cream sugar & shortening. Add dry ingredients & milk to creamed mixture. Mix at low speed. Add eggs & vanilla, increasing speed. Beat 1 minute.

Grease & flour cake pans. Bake at 350 degrees for 22 minutes.

Icing:
Combine brown sugar, salt & butter in a saucepan over low heat. Stir until sugar is dissolved. Add evaporated milk and continue stirring with wisk. Bring to a gentle boil and let bubble for about 4 minutes, stirring constantly to avoid sticking. Remove from heat & allow to cool about 5 minutes. Add vanilla. Stir to thicken to desired consistency.

Spread icing onto cooled cake
