Grandma Mulley's Lemon Sauce Recipe

½ cup sugar
1 tbsp. cornstarch
1 cup boiling water
1 lemon
2 tbsp butter

Directions:
Directions:
1. Using a fine grater or zester, rub whole lemon to produce zest. Cut lemon in half and squeeze juice. Reserve lemon juice.
2. In small pot, whisk together cornstarch and sugar to combine. Add boiling water and lemon zest.
3. Place on medium high heat and boil 5 minutes. Remove from heat and strain into heatproof bowl.
4. Stir in butter until melted followed by lemon juice. Whisk until combined.
5. If using right away, return to pot and keep warm on low.
6. Leave in heatproof bowl and,cover and refrigerate, until ready to use. Heat on medium low before serving.

This is one of two sauces Grandma Mulley served with her Steamed Christmas Pudding. I prefer this lighter sauce because it brings a nice tart contrast to balance the richness of the pudding.

Note: After refrigerating, it may be a little thinner when reheated.
