2 tbsp butter
2 tbsp flour
½ cup brown sugar
1 cup boiling water
1 teaspoon vanilla

Directions:

1. Melt butter in 2-3 litre pot on medium heat.
2. Add flour and stir to combine.
3. Add brown sugar and stir constantly, until combined and dark brown in colour, about 5 minutes.
4. Remove from heat. and using whisk, slowly add boiling water. Stir until smooth. Add vanilla.
5. Return to burner and simmer on medium low for an additional 10 minutes, stirring frequently. Turn heat on low to keep warm, if using right away.
6. Can also be made ahead and refrigerated for 5 days,
or frozen for 2 months.
6. If frozen, defrost at room temperature and reheat on medium low until warmed.

This Brown Sugar Sauce is easy to put together, and a time saver for planning Christmas dinner; it can be made ahead and refrigerated until ready to use. The sauce also freezes well. This was one of two sauces Grandma Mulley served with her Steamed Christmas Pudding. It is also a delicious topping for Gingerbread Cake.
The recipe can be doubled.
