5 lbs Russet potatoes- peeled and cut into 1 inch pieces
3 cups of chicken broth
1½ sticks of butter- cut into slices
8 oz cream cheese- softened and cut into cubes
Salt to taste
Pepper to taste
½ cup heavy cream
2 tbsp chopped parsley

Directions:
Directions:
1. Rinse potatoes off, peel and cut them into 1 inch cubes.
2. Place the potatoes and chicken broth in a crock pot.
3. Cover and cook on high for 4 hours or on low for 6-8 hours (until potatoes are tender).
4. Drain the chicken broth from the crock pot.
5. Add the butter, cream cheese, salt, pepper, heavy cream and potatoes to a bowl and mix well until the potatoes are smooth and creamy.
6. Add the potatoes back to the crock pot and turn the crock pot to warm.
7. Sprinkle with parsley.
8. Enjoy!
